Over 40 percent of edible food goes to waste in the U.S. each year, much of it produce. Wasting food wastes all of the energy that went into growing, transporting, and preparing that food. In addition, when organic matter, such as food waste, is put into the anaerobic (meaning without oxygen) environment of a landfill, it emits methane gas, a greenhouse gas 20-25 times more powerful than carbon dioxide.
